These pinwheels from Bon Appetit were a big hit at our family’s Christmas.  It’s so nice to be able to prepare them ahead of time and have them handy for any kind of party you may be planning. They keep well in the freezer and still taste delicious at room temperature.  Plus, they are relatively easy and inexpensive to prepare.


Awesome Pepperoni and Asiago Pinwheels

Yield: Makes about 60 pinwheels

These hors d'oeuvres are light, flaky and absolutely addictive. They are also simple to prepare and make a big impression — just what you want in party food.

Ingredients
1/2 cup grated Asiago cheese*
3/4 teaspoon dried thyme
3/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
2 tablespoons honey-Dijon mustard
2 ounces packaged sliced pepperoni (about twenty-four 1 1/2-inch-diameter slices)  I like
                   mine chopped finely.
1 large egg, beaten to blend

Nonstick vegetable oil cooking spray
Preparation
Mix first 4 ingredients in medium bowl. Cut puff pastry crosswise in half to form 2 rectangles. Spread 1 tablespoon mustard over 1 puff pastry rectangle, leaving 1-inch plain border at 1 long edge. Place half of pepperoni in single layer atop mustard. Top pepperoni with half of cheese mixture. Brush plain border with egg. Starting at side opposite plain border, roll up pastry, sealing at egg-coated edge. Transfer pastry roll, seam side down, to medium baking sheet. Repeat with remaining pastry rectangle, mustard, pepperoni, cheese mixture, and egg. Chill rolls until firm, about 30 minutes, or wrap and chill up to 1 day. Preheat oven to 400°F. Line 2 baking sheets with foil. Lightly spray with vegetable oil spray. Cut each pastry roll into about thirty 1/4-inch-thick rounds. Transfer pinwheels to prepared sheets. Bake until golden, about 15 minutes. Transfer to platter; serve.
*Available at specialty foods stores and some supermarkets.  (I found mine at Wal Mart!)

One of the slow cooker cookbooks that I use frequently is Slow Cooker: The Best Cookbook Ever by Diana Phillips.  I haven’t found one yet that we did not enjoy.
I really like this Maytag Blue and Walnut Dip with Apple Dippers.  It is full of flavor and can be a nice change from chips and dip.

Maytag Blue and Walnut Dip with Apple Dippers.
2 8-ounce packages cream cheese at room temperature
1/2 cup mayonnaise
2 Tablespoons Ruby Port (I subbed apple cider.)
6 drops Tabasco
1 cup chopped walnuts (I prefer to toast them.)
2 cups crumbled Maytag blue cheese (or your favorite brand)
4 to 6 Granny Smith apple, cored and cut into 8 wedges each, for serving (I like to use both red and green apples at Christmas.)
Crackers, optional
Coat the insert of a 1 1/2-3 quart slow cooker with nonstick cooking spray.  Put the cream cheese, mayonnaise, port, Tabasco, walnuts and blue cheese in a mixing bowl and stir until well blended.
Transfer the mixture to the slow-cooker insert.  Cover and cook on low for 2 to 3 hours, until heated through and bubbly.
Serve from the cooker set on warm with the apple wedges and crackers.
Serves 8.

For a very easy and delicious slow cooker candy I hope you will give this Crockpot Chocolate Cashew Clusters a try.  I’m thinking about making them this weekend but substituting in some dark chocolate for the milk chocolate since I’m a big dark chocolate fan.
I have a very nice fondue pot, but I don’t often use it for desserts.  I just use my steady friend, the slow cooker.  This Crockpot Chocolate Fondue is fun to do for both kids and adults and the slow cooker makes an easy way to keep the heat controlled.  I substitute 9 ounces of dark chocolate for half of the semisweet chocolate, but that is to suit my taste.
And you thought Crock Pot cooking was all about soups and stews!
